You’d think after having six kids I’d have this whole new baby thing down, but every baby is different! As the kids get older, there’s more activities to attend, which makes for a super busy household. The big age gap between Robert and Joseph (nine years) threw me for a loop. I thought I could wing it with their schedule, and I might have been able to, but Joseph was very colicky and I quickly realized that I could not. When I had Olivia, work was flourishing and a complicated c-section (read all about it here) made everything a painful process. This time, I’m going to try to be as ready as possible and make this a smooth transition. I know the first couple of weeks will require a laid back approach as we settle into a new routine, so I plan on stocking up on healthy foods that can be frozen and easy on the go snacks that can be dipped into this easy to make cajun ranch dressing that I know the kids love.

Once everyone got a whiff of the fact that I’d be prepping food in advance, the first thing I was asked for was homemade cajun ranch dressing (see recipe below).  I plan on storing in individual containers for kids to just grab and go.

Our favorite is the chicken melt! It goes perfectly with the cajun ranch dip and its packed with protein, making them a great snack to keep you energized and satisfied when you’re on the go.

Sometimes the best recipes are the classic ones that you can easily make with ingredients that you all normally have in the pantry. This weekend, after a LONG two weeks of battling the flu, Franklyn and I were just too tired to muster up the strength to do any grocery shopping. We decided to whip up a classic tuna pasta salad, a dish that everyone loves! It can be served as a side dish or on its own, with some fruit like I did.

Ingredients:

Elbow pasta
Albacore tuna fish in water
1 -2 cups of mayonnaise. We don’t use a lot of mayonnaise just enough so that the pasta salad has flavor is no longer dry. **We used this one with lime.
1/2 white onion
1 cup of celery
Salt and pepper

Instructions:

Cook pasta according to instructions on package
Drain tuna fish
Dice onion and celery
Add mayonnaise, salt and pepper.
Mix all together and refrigerate for about 30 minutes.
Serve this classic tuna pasta salad with fruit, crackers or for a complete meal add a soup or salad!

I’m now officially in my third trimester and having major pregnancy cravings, one of my must haves right now is sweet potatoes! I’ve been having them with eggs for breakfast, with fish and veggies for lunch or dinner and as of lately we’ve been baking them for a crispy snack. Since Valentines Day is right around the corner I thought it would be fun to make some sweet potato hearts. Originally we were just going to use a cookie cutter and make some sweet potato hearts sprinkled with sea salt and bake chips but like I said my pregnancy cravings are taking over, and I decided to add a sweet twist to them and made chocolate sweet potato hearts and add some shredded coconut.

We still baked the sweet potatoes and sprinkled with sea salt, but we then dipped into chocolate and topped with shredded coconut. It’s a different combo but these chocolate sweet potato hearts taste absolutely amazing, and even Joseph who’s my pickiest eaters was devouring them! See the easy to make chocolate sweet potato hearts with shredded coconut recipe below!

What you’ll need:

Chocolate Sweet Potato HeartsSweet potatoes
Heart cookie cutter
Sea salt
Melting chocolate
Shredded coconut
Olive oil

Instructions:

Preheat oven to 350 degrees
Rinse sweet potatoes, dry and slice sweet potatoes. **If you want them really crispy slice as thin as you possibly can. My sweet potato hearts do not have chip crispiness, but they’re crispy enough to have a slight crunch.

Chocolate Sweet Potato HeartsToss hearts in olive oil and sprinkle with a pinch or two of sea salt.
Lay out on baking sheet and bake for about 1 hour and flipping half way through. **Bake for 2 hours if you’re going for chip like crispiness.Chocolate Sweet Potato Hearts

Chocolate Sweet Potato HeartsRemove when crisp and edges have browned.
Microwave chocolate for 30 seconds and mix. Repeat until chocolate is completely melted.
After sweet potato hearts have cooled down, start dipping hearts into melted chocolate and then sprinkle with shredded coconut.

Refrigerate until chocolate is firm and serve.
