It’s been like that every day since summer kicked in and it’s days like these that call for a recipe like this watermelon, mint and feta salad from Freshfromflorida.com. To me, nothing is more refreshing than watermelon in the summer. I’m not a Florida girl but my grandparents used to send us Florida produce all year long. Boy, was it wanted.

I would have never thought to put balsamic vinegar and feta cheese on watermelon, but this looks surprisingly good. I love salt on watermelon so I bet this is amazing.
