I’m a HUGE fan of summer salads. Whether it’s a fruit salad, a corn salad, or even a pasta salad, they keep meals light. They’re easy to make and are a perfect side dish. This 4th of July we’ve decided to serve a pasta salad with grilled chicken, tomatoes and spinach. We’ll be marinating the chicken in a Ginger Dressing that’s made with sweet carrots and spicy ginger. When you think of a pasta salad, I bet you automatically think of it being smothered in some type of mayonnaise and while that’s a classic and yummy way to go, we decided instead to incorporate it into a complete meal to serve on the 4th of July. It’s a really easy go-to meal and if you wanted to make it an even quicker version, you could even skip the chicken and toss together the pasta, spinach and tomatoes with the Ginger Dressing and finish it with some parmesan cheese. It’s a dish that me and my kids love and look forward to during the warmer weather months.

Ingredients:
Pasta
Cherry tomatoes
Baby spinach
Naturally Fresh® Brand Ginger Dressing
Chicken breast
Olive oil
Salt and pepper
How To:
Marinate chicken in the ginger dressing. **Preferably over night but a couple hours will also work well.
Make pasta according to instructions on the box.
Drain pasta. Add olive oil, salt and pepper to your liking and toss.
Grill chicken until no longer pink.
Cut chicken into strips and set aside.
Throw pasta back into the pot and turn stove on low and slowly toss in spinach.
Place pasta and spinach in a bowl and toss in parmesan cheese and cherry tomatoes, then top with chicken.
