Growing up, I had rice and beans pretty frequently. Now, as a mom, not much has changed! We eat rice on almost a daily basis, and I’m not exaggerating one bit! Most of the time we serve it just plain rice and beans, like I had it when I was growing up, and everyone loves it! Joseph asks for it every night for dinner, but recently my older boys are starting to ask for a little more food diversity, so I’ve been trying to come up with ways to switch things up a little. Last time we made shrimp fried rice and it was a hit! This time I decided to make red pepper and lemon rice and I have a feeling it’s going to become a favorite at dinner time!

This red pepper and lemon rice is packed with flavor and is perfect to serve on its own, with a salad or grilled chicken. We kept it simple this time, but I’m pretty sure we’ll be serving it many different ways. The secret to making this rice was the DairyPure Milk that I added while the rice was boiling. 5 lemons
Red peppers
5 tablespoons of lemon juice which equal to 1 1/2 freshly squeezed lemons
Salt and pepper
3 tablespoons butter
3 tablespoons of olive oil (canola oil will work as well)
3 tablespoons of garlic powder
2 cups of rice
1 teaspoon of turmeric
1/2 cup of chicken broth
2 cups of milk



Melt butter and stir in olive oil.

Stir in garlic powder, red peppers, lemon juice and continue to stir.

Add rice, salt, pepper, turmeric and cook for about 2 minutes. **Continue to stir while cooking.

Stir in chicken broth, lemon juice and milk.

Bring to a boil, cover pot and reduce heat and simmer.

Top with slices of lemon and dill (skip the dill and add parmesan cheese it taste just as amazing) and serve with a tall glass of milk, and you’re good to go!

As of today, I am 31 weeks and only have about 7-8 weeks to go. My doctor and I made the decision that another c-section would be best and we’ll be scheduling it for about the first week of April. It’s gone by SO fast! The next coming weeks will be filled with hopefully a lot of shopping and maintaining a tight schedule with Olivia and Joseph, so that when the new baby arrives we can continue it smoothly. I like to focus on making reading time fun & part of our daily routine. It’s one of our favorite ways to unwind, and is a big part of our afternoon and evening routine. Only four more days until Valentine’s Day! I don’t normally go all out for Valentine’s Day but I do want to make Olivia’s first Valentine’s Day special and I’ve been trying to buy her little things I know she’ll enjoy and actually use. Below are a few of the items I’ve picked up for her that are perfect for baby’s First Valentine’s Day gift ideas!

Olivia loves carry around little buckets full of toys that she collects from around the house. I bought her this red Valentine’s Day basket just for that!

Joseph and Olivia both love rubber duckies and I know she’ll definitely love this princess duck! I also picked this small Valentine’s Day ducks for Joseph.

A bouncy red ball to throw around the house and drive her big brothers crazy. 🙂

We have a pretty big collection of books and we read them all the time together! For Valentines Day I was sent the new DK Baby Touch and Feel I Love You book. The perfect book to share with your baby and celebrate how much you love them on Valentine’s Day and every day. It’s not only a adorable book to read  it’s also interactive and allows babies to explore the different textures and expand their senses as they discover this padded board book’s tactile elements. Olivia was immediately touching and feeling the fuzzy teddy bears and sparkly hearts, even Joseph loved it!

I also got her a baby purse complete with a teething handle and when you open it up it has a mirror and little toys attached.
