Ice Cream Filled Cupcakes

Starting in August, there’s a birthday every single month (expect December) all the way up until March. This week we celebrated my oldest birthday a little early and instead of getting him what we normally do, which is apple pie and ice cream, we switched things up a little and made him some ice cream filled cupcakes. I figured since it’s still hot outside, adding his favorite Mayfield® Turtle Tracks ice cream  to the cupcakes would be perfect! I’ve never made them before but I did have them at a friends party once and they looked pretty easy to make, so I gave it a go. This is a pretty big deal in our house because I rarely ever bake. I’m glad I made them because the kids loved them (see recipe below)!

Ice Cream Filled Cupcakes

We became big fans of Mayfield® ice cream when we first moved down to Florida. Their delicious selection of ice cream became an instant hit in our house and it still is to this day! I also love that they make their ice cream using fresh cream from their very own dairy with no growth hormones. The iconic Mayfield® ice cream  was created out of a family recipe in 1923 and are known throughout the Southeast for their creamy and rich flavors that our family now loves too!

Ice Cream Filled Cupcakes

Ingredients:

1 box of milk chocolate cake mix
3 eggs
Oil
Mayfield® Turtle Tracks ice cream
Icing
Sprinkles
Knife **any size will work but smalls ones are easier to control

Instructions:

Make your cupcakes according to instructions on the box.

Cut a circle into cupcake, remove and hollow out the center of cupcake.

Fill cupcake with ice cream.

Put the cupcake tops back and refrigerate until ready to serve.

Our First Staycation

We’ve lived about 15-20 minutes away from the Tarpon Springs Sponge Docks for over 11 years and it wasn’t until this weekend that we actually got out there to really explore it. It  turned into our first staycation that was a lot more fun than I thought it would be.
We went on a sunset cruise that takes you  to a little island where you can collect shells and watch the sunset.

Did a little window shopping. I thought that most stores were for souvenirs but they actually had a few stores that carried cool jewelry and some pretty dresses.

Indulged in some authentic greek food at a little restaurant called Mykonons.

Our First Staycation

Have you ever had a staycation? I actually loved the convenience of being able to come home every night instead of renting a hotel. Next up: We’re actually headed right back to Tarpon Springs for their Hippie Fest in August.


I know it may seem that I say this all the time, but man have I been busy! Being consciously aware of every little thing going on is super important because I feel like time is just flying by. In just a few weeks, William will be senior in high school, Dylan’s entering his first year in high school, Robert’s starting middle school, and Olivia will be almost 6 months! Summer feels like it just started and school registration is in two weeks! Down here in Florida, school ends and starts a little bit earlier, which always bums the kids out because everyone else is still enjoying their Summer break while they’re starting to get homework.

At The Moment

Me: Not much is new with me, just working and trying to make more of an effort and giving myself the time I need to workout and put together some outfits. This Minnie Mouse tee isn’t really what I had in mind, but it is extremely soft and makes me smile. Also, Joseph absolutely loves it when I wear it!

Joseph is able to have full blown conversations with us now and it’s hilarious! He loves watching Peppa Pig, Paw Patrol and, just recently, Spider-Man.

The past couple of weeks we’ve been dealing with Olivia’s eczema. I hate to see her all itchy and fussy but thankfully we figured out it was her formula and as soon as it switched she got better. Other than that, Olivia has been busy rolling over, trying to crawl and starting to eat solids.

I can’t wait for the fall. This summer has been one of the hottest we’ve ever had, it’s brutal!


Scallops, Spinach & Strawberries With Balsamic Syrup

During the summer we always try to incorporate more veggies and fruit into each meal. It keeps meals healthy and they’re quicker to make. This week we decided to make scallops, spinach and strawberries with balsamic syrup. It’s the perfect summer appetizer for guest or even as a light dinner if you add a side salad. If you’re looking for a quick appetizers for guest, this is it!

Ingredients:

Scallops, Spinach & Strawberries With Balsamic Syrup
Scallops
Salt and pepper
Olive oil
2 cups of balsamic vinegar
4 tablespoons of Sugar
Strawberries
Spinach

Directions:
Cut strawberries in half.

Salt pepper scallops to your liking.

Heat olive oil in pan and cook scallops for 2 minutes and flip. You’ll know scallops are done when they’re golden brown on both sides and are firm to the touch.
