Sometimes the best recipes are the classic ones that you can easily make with ingredients that you all normally have in the pantry. This weekend, after a LONG two weeks of battling the flu, Franklyn and I were just too tired to muster up the strength to do any grocery shopping. We decided to whip up a classic tuna pasta salad, a dish that everyone loves! It can be served as a side dish or on its own, with some fruit like I did.

Elbow pasta
Albacore tuna fish in water

1/2 white onion
1 cup of celery
Salt and pepper

Instructions:

Cook pasta according to instructions on package
Drain tuna fish
Dice onion and celery
Add mayonnaise, salt and pepper.
Mix all together and refrigerate for about 30 minutes.
Serve this classic tuna pasta salad with fruit, crackers or for a complete meal add a soup or salad!

The temps are expected to drop this upcoming week and I’m SO excited!! It doesn’t really feel very festive when it’s 80 degrees outside, so anytime it drops even two or three degrees, I break out a light sweater and whip up a cup of hot chocolate. It’s Franklyn’s birthday next week so I decided to whip up a special homemade bourbon spiked hot chocolate. Mine will be the non-alcoholic version, but it’s yummy nonetheless! This would be perfect for guest instead of desert and can be served with crackers or warm bread and butter. Check out my homemade bourbon spiked hot chocolate recipe below!

Did you know that September is National Potato Month? Yeah, me neither! It seems that there’s a national month for just about everything nowadays, but National Potato Month is probably one of my favorites! There’s so much you can do with potatoes and sweet potatoes! We use them a lot in salads, with soups, and, when I have the time, I bake some chips. In honor of it, I decided this time to make our Cheesy Jalapeño & shrimp stuffed sweet potatoes! Isn’t that easy? Serve it with a side salad, rice or some avocado. I intended to eat it with avocado (a must with almost every meal in our house), but unfortunately I couldn’t find one ripe enough to eat.

What will you make in honor of National Potato month?

Florida Watermelon Slices with Balsamic Syrup, Mint Oil & Feta Cheese

It’s about 90 something degrees just about every single day and the A/C barely cools us down. It’s been like that every day since summer kicked in and it’s days like these that call for a recipe like this watermelon, mint and feta salad from Freshfromflorida.com. It’s not only easy to make, but it is also refreshing, healthy, and perfect to serve for lunch or dinner. To be honest, it also looks very pretty! We’ve been known to devour an entire watermelon in one day, and now that I added the Florida Watermelon Slices with Balsamic Syrup, Mint Oil & Feta Cheese  to my list of favorites, we’re going to have to start buying more than one watermelon at a time!

This recipe is one of the many that Fresh From florida features on its site. These recipes use the many fresh fruits, vegetables, and even seafood, grown right here in Florida. There’s also seasonal foods to pick from! It’s a Floridian perk that I’ve never taken for granted, especially during the summer. Right now we’ve been enjoying sweet corn, tomatoes with avocado, and tons of watermelon for desert and, more recently, salad, as seen below. This watermelon mint salad takes less than 20 minutes to make and uses fresh watermelon slices, fresh parsley and mint, balsamic vinegar, a touch of Florida grown sugar and topped with feta; it’s the perfect summer side dish! While it’s delicious enough to eat on its own, you can also pair it with grilled steaks or just about any seafood!
