What Is Caprese Salad 

If you love mozzarella, tomatoes, and balsamic vinegar, then you’ll probably enjoy Caprese salad. It originated in Italy and usually features soft and fresh mozzarella with earthy basil and sweet tomatoes.

It’s a very simple salad that is usually just seasoned with salt and pepper. A lot of Americans like to top it with balsamic glaze, but that’s not how it started. 

In fact, if you love Caprese salad, you might like low-carb Caprese chicken salad too. It has a lot of similar flavors but you can eat it as a full meal.

I took everything I loved about keto Caprese chicken and turned it into a casserole that you can use in your meal prep or to feed your entire family.

If you’re going to use it in your meal prep, store it in an airtight food storage container and keep it in the refrigerator for up to three days. 

Keto Caprese Chicken 

The biggest difference between this casserole and classic Caprese chicken is that this casserole doesn’t have any balsamic vinegar and it has a pesto-mayo dressing that enhances the flavors of the chicken and fresh basil.

Since traditional Caprese chicken doesn’t have balsamic vinegar, my casserole is pretty close to the original. This is a wonderful way to use leftover cooked chicken in a brand new way.

There are only 4 grams net carbs in each serving! You’ll love how the pesto combines with tomatoes and mozzarella cheese. Trust me – splurge a little and chop up fresh mozzarella. It has a lighter flavor that lets you really taste the pesto and fresh basil.

I used cherry tomatoes, but you can use any type of tomatoes that you want. Grape tomatoes or even chopped Roma tomatoes in this recipe, as long as you use one cup. 

What To Eat With Caprese Chicken 

This is a very filling and tasty chicken casserole. You don’t need a lot of side dishes to go along with it.

If you like the combination of tomatoes and basil, make some Keto Tomato Basil Cream Cheese Pinwheels. Kids love them! Keto Cheesy Cauliflower Breadsticks are another wonderful choice if you love bread or rolls.

Ingredients:

Shredded chicken
Pesto sauce
Mayonnaise
Plain Greek yogurt
Cherry tomatoes 
Mozzarella cheese shredded
Parmesan cheese grated
Fresh basil 
Salt and pepper 

Instructions:

Preheat the oven to 375 degrees.

Mix together the chicken, pesto, mayonnaise, yogurt, ½ of the parmesan cheese and salt and pepper to taste.

Spread the mixture into a casserole dish.

  • 1/3 cup Pesto Sauce
  • 1/3 cup Mayonnaise
  • 1/3 cup Plain Greek Yogurt
  • 1 cup Cherry Tomatoes halved
  • 2 cups Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • Fresh Basil for garnish
  • Salt and Pepper to taste

Instructions
 

  • Preheat the oven to 375 degrees.
