Low-Carb Greek Chicken Chili

Greek Chicken Chili 

As much as I love making American and Italian recipes (and even some Cuban and Chinese ones), sometimes I really crave Greek food.

Low-Carb Greek Chicken Chili

When that happens, making soup is one of the best ways to fix that craving. This Greek chicken chili is filled with lemon juice, artichoke hearts, Roma tomatoes, Greek olives, and spiced with fresh dill. 

This is a bright and zesty chili that doesn’t taste at all like any other chili you’ve ever made. It’s a slow cooker recipe, so make sure you have at least three hours for it to cook.

As it does, the flavors will meld together in a magical way. And keep reading, because I’ll share how to make it even quicker on the stovetop if you need a quick soup for dinner. 

Keto Chicken Chili 

Almost everyone has heard of Keto White Chili. It’s usually made with cream and Mexican spices like peppers and tomatoes. I took that idea and made a Greek version.

Low-Carb Greek Chicken Chili

This one is a bit tangier and lighter. The only cream in it is about three ounces of cream cheese. So, it’s a thinner chili than others you might have made. 

I love slow cooker soup recipes, and this is one of the easiest ones you can make. You literally add everything to the slow cooker and let it cook for about three hours on high.

If you need more time, cook it on low for about six hours. That’s the entire recipe!

You can also make this on the stove. Pre-cook the chicken and then add it to the stove with all the other ingredients.

Bring it to a slow simmer and let it cook for about 25 minutes. It’s a really simple and quick recipe. 

Low-Carb Greek Chili 

There are a lot of different ways that you can customize this tasty Greek chili. If you’re short on time, use cooked chicken from a rotisserie or some leftover cooked chicken from another meal.

Low-Carb Greek Chicken Chili

Instead of chopping an onion, use some frozen diced onion and any color of pepper will taste delicious in the chili. You can also use chicken thighs instead of chicken breasts. 

If you don’t have chicken broth, make some from chicken bullion cubes or use vegetable broth. The zucchini is optional.

I think it gives the chili extra flavor (and makes it more filling). But if you don’t have it or don’t like it, leave it out!

The olives are also completely optional.

Low-Carb Greek Chicken Chili

This chili has 8 grams net carbs in each serving, so be careful with what else you eat with it. 

Serve some Low-Carb Greek Broccoli Salad with the soup. It has a lot of similar ingredients.

How To Store Homemade Soup 

Store this Greek chicken chili in an airtight and spill proof container. I suggest keeping it in a mason jar with a screw-top lid.

Then, store it in the refrigerator. I suggest eating it within three days for the best flavor. 

You can freeze the soup, too. Store it in a freezer-safe bag, seal it, and lay it flat on a baking sheet.

Then, place the baking sheet in the freezer. This will help the soup to freeze completely flat.

When you’re ready to eat it, pour the frozen soup into your slow cooker and heat it up on low for a few hours. It will stay fresh in the freezer for about six months.

Low-Carb Greek Chicken Chili Ingredients

Ingredients:

  • Boneless skinless chicken breasts
  • Red bell pepper chopped
  • Onion chopped
  • Greek seasoning
  • Oregano
  • Minced garlic
  • Juice from ½ a lemon
  • Chopped canned artichoke hearts drained
  • Zucchini chopped
  • Roma tomatoes diced
  • Fresh chopped dill
  • Cream cheese
  • Chicken broth
  • Feta cheese
  • Greek olives

Instructions:

Cooking Chicken Breasts

Add the chicken breasts to the bottom of the crockpot, and sprinkle with the Greek seasoning and oregano.

Chopped Zucchini

Place the onions, bell peppers, zucchini, romas, garlic, dill and cream cheese into the crockpot.

Adding Broth
Pour in the lemon juice and chicken broth. Cover and cook on high for 3 hours.

Remove the chicken and shred it well.

Low-Carb Greek Chicken Chili

Return the chicken to the crockpot, and stir to combine everything together well.

Garnish with feta cheese and Greek olives before serving.
