Low Carb Taco Stuffed Avocado

These taco stuffed avocados is a delicious low carb recipe where you can enjoy all of the taco meat and all of the yummy toppings without the shell!

Ingredients

  • 1 pound ground beef
  • 1 white onion
  • 1/2 cup sharp cheddar cheese
  • 8 cherry tomatoes sliced
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp chili powder
  • 1 tsp cayenne may add more for extra heat
  • 1 tsp salt
  • 1 tsp pepper
  • 4 avocados sliced in half

Instructions

  1. In a skillet, cook your beef and onions until beef is browned. Add in cumin, cayenne, paprika, and chili powder. Add salt and pepper. Stir well.

  2. Slice avocado in half and remove the seed. Take a spoonful of the avocado out and set aside. Fill your avocado with ground beef, cheese, and tomatoes. 
  3. Use leftover avocado from the spoonful to top!
