Ingredients

  • 1 pounds spinach
  • 2 cups Success® Boil-in-Bag Quinoa
  • 2 pounds mushrooms
  • 1/4 cup olive oil
  • 1 tbsp fresh garlic
  • 1/2 cup red wine vinegar
  • Salt & pepper to taste
  • 1/2 tsp red pepper flakes

Instructions

  1. Make Success® Boil-in-Bag Quinoa according to instructions on the packaging and set aside.

  2. In a bowl whisk vinegar, olive oil, salt, and pepper.

  3. In a skillet add mushrooms and drizzle half the dressing, toss and cook until mushrooms are soft.

  4. Turn down heat and top with spinach and quinoa.

  5. Stir until spinach is slightly wilted. Add remaining dressing, stir and serve!

  6. Top with red pepper flakes for a kick and enjoy!
