This keto buffalo chicken skillet casserole recipe is my go-to quick low carb dinner that’s made with buffalo chicken, cauliflower rice, and cheese. Perfect for busy weeknights and for meal prepping!
Preheat oven to 350 degrees Fahrenheit.
Shred the chicken and add to a large bowl.
Add softened cream cheese and buffalo sauce to bowl and mix and set aside.
Make the cauliflower rice according to package instructions.
Add cauliflower rice to the skillet.
Layer with buffalo chicken mixture.
Top with shredded cheddar cheese and bake for 20-30 minutes.
Drizzle with more hot sauce and sprinkle with fresh parsley.
This buffalo casserole also tastes amazing when topped with bacon or blue cheese!
