Ingredients

  • 1/2 pound  shrimp
  • 1 bag spaghetti-style Shirataki Noodles
  • 1 tbsp olive oil
  • 1/3 cup mushrooms
  • 1 cup shredded cabbage *Napa is what I used but any variety will work!
  • 1/2 cup thinly sliced scallions
  • 2 cloves of garlic or garlic powder

Sauce

  • 1/4 cup 1/4 cup soy sauce or coconut aminos
  • 1 tsp sesame oil
  • 1 tsp garlic powder
  • 2 tbsp unseasoned rice wine vinegar
  • 1 tbsp Granulated sugar substitute
  • 1/2 tsp low carb hoisin sauce adjust accordingly.

Optional

  • 1/2 tsp red pepper flakes

Instructions

  1. Add shrimp and soy sauce to a bowl and marinate while making your sauce.

  2. In a bowl add all the ingredients for the sauce and stir. Set aside.

  3. Heat oil in pan and cook shrimp. Remove shrimp from heat and set aside.

  4. In the same pan cook mushroom until brown or soft.

  5. Remove mushrooms and add garlic, scallions, and cabbage. Cook until wilted and remove from heat.

  6. Add noodles and toss.

  7. Top noodles with mushrooms, shrimp and sauce. Cook for 2-3 minutes

  8. Garnish Keto Shrimp Lo Mein with toasted sesame seeds or drizzle with more soy sauce or hot sauce!
