KETO CHOCOLATE EASTER EGGS

Ingredients

  • 1/4 cup butter
  • 3 tsp coconut oil use more if needed
  • 1/2 cup erythritol
  • 1 cup unsweetned peanut butter

Chocolate Coating

  • 1 cup dark chocolate I used Lily's
  • 3 tsp coconut oil add more if needed to smoothen choclate

Instructions

  1. In a microwave-safe bowl add butter, coconut oil, and peanut butter and melt on high.

  2. Stir in sweeter until smooth.

  3. Spoon mixture into molds and freeze until hard.

Chocolate Coating

  1. Place chocolate in a bowl and place it in a pan of hot water. Stir until smooth.

  2. Start dropping eggs in chocolate and use forks to roll them around until coated.

  3. Place on parchment-lined tray or plate and refrigerate until set.

  4. These keto Easter eggs can be frozen for up to a month.
