Easy Lemon Rice

This flavorful red pepper & lemon rice is a delicious side that that’s easily made in under 20 minutes!

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil or avocado oil
  • 3 garlic cloves minced
  • 2 tbsp  red pepper (optional) optional
  • 1 tsp  lemon zest
  • 1 cup long grain rice
  • 1/4 tsp  turmeric powder
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1 cup milk
  • 3 tbsp lemon juice
  • lemon juice

Instructions

  1. In a pan melt butter and olive oil.

  2. Stir in zest, red pepper and garlic. Stir until soft.

  3. Now add rice.

  4. Season rice with numeric, salt and pepper.

  5. Cook for 1-2 minutes.

  6. Add broth, milk and lemon juice.

  7. Bring rice to a boil.

  8. Reduce heat to simmer and cover pan.

  9. Simmer until liquid has evaporated (about 15-20 minutes)

  10. Remove pan from heat.

  11. Taste and adjust seasoning.

  12. Garnish with dill.
