This cucumber egg salad is made with a spicy dressing and fresh, crunchy vegetables.
In a large bowl, combine chopped eggs and cucumber.
Add chopped celery, bacon, and green onions.
In a separate bowl, combine mayo, mustard, and hot sauce.
Pour mixture over the chopped ingredients. Stir well.
Add fresh parsley and paprika. Stir.
Top with additional bacon crumbles and fresh parsley, if desired.
