These low-carb cranberry bars are a healthy holiday treat.
Whisk together flour, baking powder, sugar, salt, and cinnamon.
Stir in coconut oil and maple syrup. Reserve approximately ¼ cup of the mixture. Pour remaining into a parchment paper-lined baking dish.
Bake at 350 degrees for approximately 18 minutes.
While the crust is baking, heat the cranberry filling ingredients. Bring to a boil and continue to stir until it begins to thicken.
Remove from heat and let cool.
Pour cranberry mixture onto the crust. Top with reserved crust mixture and chocolate chips.
Bake at 350 degrees F for another 15 minutes. Remove the let cool.
