This is the best low-carb Caesar egg salad recipe! Save the dressing recipe and use it on your salads.
To create the dressing, whisk together all the ingredients until creamy. Set aside.
In a large bowl, combine chopped lettuce and hard boiled eggs.
Toss with desired amount of the homemade dressing (I used about ¾ cup).
Garnish with crumbled bacon, parmesan cheese and cracked black pepper.
