This easy keto pepper steak is perfect for meal prep or a budget-friendly low-carb family meal.
Heat 1 tablespoon of olive oil in a skillet over medium high heat on the stove.
Add the steak to the skillet with the oil, and season with salt and pepper to taste. Saute the steak until browned and cooked to your liking. Set aside.
Add the other tablespoon of olive oil to the skillet, and reduce the heat to medium.
Place the sliced peppers into the skillet and saute until becoming tender. Remove and set aside.
Add the minced garlic and ginger paste to the skillet and saute for 30 seconds.
Mix together the soy sauce, brown sugar substitute and xanthan gum in a bowl.
Add the steak and peppers back into the skillet, and toss to combine.
Pour the soy sauce mixture over the meat and peppers in the skillet, and saute for several more minutes, stirring to coat well.
