Keto Strawberry Chocolate Cheesecake Bark

This keto strawberry chocolate cheesecake bark is a healthy way to enjoy cheesecake and a low-carb alternative to ice cream.

Ingredients

  • 1/4 cup Strawberries finely chopped
  • 1/4 cup Walnuts chopped
  • 2 tbsp Lily Baking Chips melted
  • 8 ounces Cream Cheese
  • 2 tbsp Swerve Powdered Sugar
  • 1 tbsp Vanilla Extract
  • 1 1/2 cups Greek Yogurt plain, full-fat

Instructions

  1. Line a sheet pan with parchment paper.

  2. In a bowl with a hand mixer, mix the soft cream cheese and then add the confectionary sugar.

  3. Mix in the yogurt and vanilla and mix for 1 -2 minutes. It will be slightly fluffy.

  4. Place your bark mixture in a pan. You can make it whatever shape you want. Since I used a smaller sheet pan, I just filled the bottom.

  5. Using your melted chocolate. Make dollops on the yogurt and then with a toothpick or knife, swirl it into the bark.

  6. Sprinkle with strawberries and walnuts.

  7. Freeze for 3+ hours to set.

  8. Cut and serve immediately.
