This keto Greek cauliflower rice is full of Mediterranean flavors - with dill, feta cheese, and red onion. Add chicken for a complete meal!
Prepare the cauliflower rice, per bagged instructions. Set aside.
Chop cucumber, tomato and red onion.
In a large bowl, combine rice with chopped ingredients and crumbled feta.
Stir in olive oil, the juice of 1 lemon, dill and garlic powder. Stir well, so all ingredients are well coated.
Top with a dash of salt & pepper, if desired. You can serve this warm or cold.
