Make dinner-time easy! These low-carb chicken foil packets are a simple 30-minute meal that uses just one pan (and makes clean-up easy too).
Chop chicken into bite sized pieces. Top with a dash of salt & pepper.
Chop zucchini into bite sized pieces.
Using foil, create 4 large boats.
Place equal amounts of chicken and zucchini in each of the foil boats.
Top each with 1 tsp of minced garlic and ½ tsp of butter.
Close each foil pack.
Bake at 425 degrees F for approximately 30 minutes.
Remove and let cool, slightly.
Garnish with fresh parsley and crumbled feta cheese.
I like to spray the foil with nonstick spray, as well.
