Ingredients

  • 2 Boneless, Skinless, Chicken Breasts cut in half lengthwise
  • 1 tbsp Olive Oil
  • 1/4 cup Dijon Mustard
  • 2 tbsp Unsalted Butter melted
  • 4 tbsp Sugar-Free Honey Substitute
  • 1 pound Green Beans Trimed and broken into small pieces

Instructions

  1. Preheat the oven to 400 degrees.

  2. Season the chicken with salt and pepper.

  3. Heat the oil in a skillet over medium high heat on the stove.

  4. Sear both sides of the chicken, and set aside.

  5. In a bowl, whisk together the honey, butter and dijon mustard.

  6. Place the chicken into a large mixing bowl with the green beans, and pour the honey mustard mixture over the top. Toss to combine well.

  7. Add the chicken and green beans in a single layer to a sheet pan.

  8. Cover the sheet pan with foil and bake for 20 minutes.

  9. Uncover and bake for an additional 10 minutes.
