Ingredients

  • 4 Boneless, Skinless, Chicken Breasts
  • 2 tbsp Butter unsalted
  • 2 tbsp Olive Oil
  • 1/2 cup Sliced Mushrooms
  • 1/4 cup Onion chopped
  • 1/4 cup Bacon crumbled
  • 8 ounces Raw Spinach Leaves
  • 1 tsp Minced Garlic
  • 2 ounces Cream Cheese
  • 1/3 cup Heavy Whipping Cream
  • 1/3 cup Shredded Mozzarella Cheese
  • 2 tbsp Parmesan Cheese grated
  • 1 pinch Nutmeg

Instructions

  1. Preheat the oven to 400 degrees.

  2. Add the butter to a skillet over medium heat on the stove.

  3. Saute the onion and mushrooms in the skillet until softened.

  4. Stir in the garlic and saute another 30 seconds.

  5. Mix in the cream cheese until melted.

  6. Whisk in the heavy whipping cream, mozzarella cheese, parmesan cheese, nutmeg and salt and pepper to taste. Saute until the sauce thickens.

  7. Add the spinach and bacon to the skillet and saute until the spinach has wilted.

  8. Remove the mixture from the heat.

  9. Season the chicken breasts with salt and pepper on both sides.

  10. Cut a pocket into the center of each chicken breast, being careful not to slice them all of the way through.

  11. Heat the olive oil over medium high heat on the stove in an oven-safe skillet.

  12. Sear the chicken on both sides to brown well.

  13. Place the skillet into the oven and bake for 25-30 minutes until the chicken is cooked through.
