Ingredients

  • 6 Cucumbers
  • 1/3 cup Red Onion chopped
  • 1/2 cup Cilantro chopped
  • 1/8 cup Rice Wine Vinegar
  • 1/4 cup Water
  • 1 tsp Sesame Oil
  • 1 tbsp Lime Juice
  • 1/2 tsp Swerve Sugar Substitute optional
  • Pinch of salt

Garnish

  • Chopped Peanuts
  • Sesame Seeds
  • Red Pepper Flakes

Instructions

  1. Slice the cucumber into ½ inch pieces.

  2. In a large bowl, combine cucumber and red onion.

  3. In a small bowl, whisk together vinegar, water, sesame oil, salt, and lime juice. **If you would like a little sweetness to your salad dressing, add the swerve sugar substitute.

  4. Add the dressing to your cucumbers/onions, along with fresh cilantro. Toss everything together.

  5. Top with chopped peanuts, sesame seeds, and red pepper flakes if desired.
