This tasty skillet keto chicken and mozzarella recipe is faster than takeout! The chicken is smothered in a zesty tomato cream sauce.
Add the olive oil to a skillet over medium high heat on the stove.
Place the chicken into the heated skillet and season with the garlic powder as well as salt and pepper to taste.
Saute the chicken until completely cooked through. Remove and set aside.
Add the butter to the skillet along with the minced garlic. Saute for 30 seconds.
Stir in the heavy whipping cream, tomato paste and salt and pepper to taste.
Mix the spinach into the sauce until wilted.
Add in the parmesan cheese, and stir to combine.
Simmer the sauce until thickened, and then return the chicken to the skillet.
Cook for several more minutes.
Top with the mozzarella cheese and cover until the cheese is melted.
Serve garnished with chopped parsley.
