This bright yellow and green side dish livens up the dinner table. It's a low-carb zucchini recipe that's ready in 10 minutes.
Cut zucchini and yellow squash into quarters.
In a large skillet, begin to heat olive oil.
Add chopped zucchini and squash. Cook for approximately 3 minutes before turning. If you turn too often, you will not get crispy brown pieces.
Cook until zucchini and squash are tender and all sides are slightly browned.
Add butter, garlic, salt and pepper.
Continue to cook until butter is melted and garlic is aromatic; approximately another 1-2 minutes.
Remove and garnish with parsley and parmesan cheese.
