Remake the classic dish from Taco Bell. This keto Mexican pizza is made with homemade low-carb tortillas - kids love it too!
Preheat the oven to 350 degrees.
Add the cream cheese and mozzarella cheese to a bowl that is microwave safe.
Heat for 30 second intervals until the cheeses are melted and combined.
Add the cheese to a mixing bowl with the remaining crust ingredients, and blend until smooth.
Divide the dough in half.
Roll each piece of dough out thin between two pieces of parchment paper. Use a large pot lid or pan to cut out a large tortilla shape from the dough.
Place the tortillas on a parchment lined baking sheet, and bake for 10-15 minutes, turning halfway through the baking time.
While the tortillas are baking, brown the ground beef completely in a skillet over medium high heat. Drain any excess grease.
Place one tortilla on the baking sheet, and top with the ground beef and half the shredded taco blend cheese.
Add the other tortilla on top of the meat mixture.
Spread the enchilada sauce over the top tortilla.
Sprinkle with the tomatoes, green onion and remaining cheese.
Bake for 10 minutes, slice and serve.
