Low-Carb Chicken Zoodle Lo Mein

Remake classic lo mein with high-fiber zucchini noodles. Chicken zoodle lo mein is just as delicious and the perfect takeout copycat.

Ingredients

Chicken

  • 4 Boneless Skinless Chicken Breasts cut into thin strips
  • 2 tbsp Olive Oil
  • 4 cups Broccoli Florets
  • 1 Red Bell Pepper cut into thin strips
  • 1 cup Julienned Carrot Strips
  • 1 medium Onion cut into thin strips
  • 5 medium Zucchini spiralized

Sugar-Free Lo Mein Sauce

  • 1 1/2 cups Low-Sodium Chicken Broth
  • 4 cloves Garlic minced
  • 1/4 cup Liquid Aminos
  • 3 tbsp Oyster Sauce
  • 1 tbsp Rice Wine Vinegar +1 teaspoon
  • 1 tsp Ground Ginger
  • 1 tsp Xanthan Gum for thickening

Instructions

  1. Season the chicken with salt and pepper as desired.

  2. In a large (12 inch or larger) skillet, wok, or dutch oven over medium-high heat, add 1 tablespoon of the olive oil and part of the chicken. Brown the chicken on both sides and cook through until done. Repeat with the remaining chicken, adding oil if needed. Remove the chicken from the skillet but keep warm.

  3. To the skillet, add the remaining oil and the vegetables. Cook until the vegetables begin to soften, about 2 to 3 minutes.

  4. Whisk together the sauce ingredients. Pour over the vegetables and bring to a boil.

  5. Add the chicken and toss together to coat in the sauce.
