Ingredients

Almond Flour Lemon Cookies

  • 1 1/4 cup Almond Flour
  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 4 tbsp Butter softened and unsalted
  • 1 ounce Cream Cheese softened
  • 1 tsp Vanilla Extract
  • Zest of Half A Lemon
  • 2 tsp Lemon Juice

Lemon Cream Filling

  • 4 ounces Cream Cheese softened
  • 1 cup Swerve Confectioner's Sugar Substitute
  • 1 squeeze Fresh Lemon Juice
  • Zest from Half A Lemon

Instructions

  1. Mix together all of the ingredients for the cookies until smooth.

  2. Chill the dough for 1 hour.

  3. Roll the chilled dough to about ¼ of an inch thick in between two pieces of parchment paper.

  4. Use a small circle cookie cutter to cut out circles of dough.

  5. Place the circles of dough on a parchment lined baking sheet.

  6. Bake the cookies in a 350 degree oven for 10-15 minutes until lightly browned. Cool to room temperature.

  7. Mix together the ingredients for the filling.

  8. Spread the filling on the cooled cookies, and top with another cookie to form a sandwich.
