Ingredients

  • 2 large Chicken Breasts
  • 1 tbsp Mexican or Taco Seasoning
  • 1 tbsp Olive Oil
  • 1 cup Salsa
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. Cut the chicken breasts in half through the middle to form 4 thinner chicken fillets.

  2. Season the chicken with salt, pepper and Mexican seasoning.

  3. Place the oil in a skillet over medium heat.

  4. Once hot, add the chicken fillets and sear on the first side until well-browned, about 3-4 minutes.

  5. Flip the chicken over and continue cooking until chicken reaches an internal temperature of 165F. Remove from heat.

  6. Preheat the oven to 450F.

  7. Top each chicken fillet with salsa and shredded cheddar cheese.

  8. Place the chicken in the oven and cook until cheese melts, about 3-5 minutes.
