Ingredients

  • 2 large Eggs
  • 2 tbsp Heavy Whipping Cream
  • 1/2 cup Almond Flour
  • 1 1/2 cups Pork Rind Crumbs
  • 1/2 cup Parmesan Cheese grated
  • 2 pounds Boneless Skinless Chicken Thighs cut into pieces
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1 tsp Italian Seasoning

Instructions

  1. Preheat the air fryer to 400 degrees.

  2. In a bowl, whisk together the eggs and heavy whipping cream.

  3. Place the almond flour into a shallow dish.

  4. Mix together the pork rind crumbs, parmesan cheese, paprika, garlic powder, onion powder, Italian seasoning and salt and pepper to taste in a separate shallow dish.

  5. Dip the chicken pieces into the almond flour, then the egg mixture, and finally, coat in the crumb mixture.

  6. Place onto a greased baking tray, and cook for 10 minute, or until golden brown and cooked through completely.
