Low-Carb Dill Pickle Soup With Bacon

Ingredients

  • 1/2 Onion chopped
  • 1 cup Celery chopped
  • 1/2 cup Carrots chopped
  • 2 cups Turnips peeled and cubed
  • 1 cup Dill Pickles finely chopped
  • 1/2 cup Dill Pickle Juice
  • 1/2 cup Sour Cream `
  • 5 cups Chicken Broth
  • 3 tbsp Butter
  • 1 pinch Cayenne Pepper
  • 1 bunch Fresh Dill for garnish
  • Chopped Bacon Pieces for garnish

Instructions

  1. Melt the butter in a pot over medium heat.

  2. Add in the onions, celery, carrots and turnips, and saute until beginning to soften.

  3. Add in the dill pickles, pickle juice, chicken broth, salt and pepper to taste and cayenne pepper. Stir to combine well.

  4. Bring the mixture to a boil.

  5. Reduce the heat, cover and simmer for 20-25 minutes until the vegetables are tender.

  6. Stir in the sour cream, and simmer for another 5 minutes before serving.

  7. Garnish with bacon pieces and fresh dill.
