Cook the bacon and crumble. Drain the grease from the skillet, and set aside the bacon.
Heat the olive oil in the same skillet you used to cook the bacon.
Add the jalapenos to the skillet, and saute until beginning to soften.
Mix in the minced garlic, and saute for 30 seconds.
Stir in the chicken, cream cheese and ranch seasoning. Stir until the cheese has melted completely.
Toss in the coleslaw mix, and stir to combine well. Reduce the heat to medium/low, cover and saute until the cabbage has begun to soften.
Stir in the bacon and add salt and pepper to taste.
Garnish with green onions and cheddar cheese if desired before serving.
