Ingredients

  • 6 mini Cucumbers
  • 1 large Can of Chicken drained well
  • 2 tsp Dijon Mustard
  • 1/2 cup Mayonnaise dived into two 1/4-cup servings
  • 3 tsp Lemon Juice divided
  • 1/2 cup Chopped Pecans
  • 1/4 cup Sugar-Free Dried Cranberries
  • 1/4 cup Chopped Green Onions
  • 1/4 cup Chopped Celery

Instructions

  1. Slice the cucumbers in half lengthwise, and use a spoon to scoop out the flesh from the center.

  2. In a bowl, combine the canned chicken, dijon mustard, ΒΌ cup of the mayonnaise, 1 tsp of the lemon juice, pecans, cranberries, green onions, celery and salt and pepper to taste. Stir to combine well.

  3. Fill the cucumbers with the chicken salad mixture.

  4. In a bowl, mix together the remaining mayonnaise and lemon juice until smooth.

  5. Drizzle the mayonnaise mixture over the filled cucumbers and serve.
