Try something different for lunch! This cranberry pecan chicken salad stuffed cucumber is low-carb and so much fun to put together (and eat!)
Slice the cucumbers in half lengthwise, and use a spoon to scoop out the flesh from the center.
In a bowl, combine the canned chicken, dijon mustard, ΒΌ cup of the mayonnaise, 1 tsp of the lemon juice, pecans, cranberries, green onions, celery and salt and pepper to taste. Stir to combine well.
Fill the cucumbers with the chicken salad mixture.
In a bowl, mix together the remaining mayonnaise and lemon juice until smooth.
Drizzle the mayonnaise mixture over the filled cucumbers and serve.
