Add the almond milk and heavy whipping cream for the eggnog mixture to a saucepan over medium heat.
Once warmed, whisk the egg yolk in a small bowl, and slowly add in a bit of the warmed milk mixture, whisking continuously as you do.
When tempered, stir the egg yolk mixture into the saucepan along with the cinnamon, nutmeg and Swerve sugar substitute. Continue to simmer until the mixture is quite thick. Remove, and let cool.
Place the cooled eggnog mixture into a mixing bowl with the cheesecake filling ingredients, and beat until smooth and creamy.
Pipe the cheesecake mixture into shot glasses, and add a cinnamon stick, and some sprinkled cinnamon for garnish before serving.
