Bursting with tart cranberries and crunchy pecans, keto magic bars are a high-protein dessert you can enjoy, guilt-free, for breakfast.
Preheat the oven to 350 degrees, and grease a 9x9 baking dish well.
In a bowl, combine the crust ingredients until crumbly.
Press the crust mixture into the bottom of the baking dish.
Bake for 15 minutes, and allow to cool.
While the crust is baking, add the heavy whipping cream to a pot over medium heat.
Stir, and simmer until the cream thickens.
Remove from the heat, and stir in the Swerve, butter, vanilla extract and xanthan gum. Stir to combine well.
Layer the pecans, coconut, chocolate chips and cranberries over the cooled crust.
Pour the mixture in the pot over everything.
Bake for 20-25 minutes.
Let cool to room temperature, and chill for 2 hours in the fridge before serving.
