Ingredients

  • 1/4 cup Matchstick Carrots
  • 2 tbsp Chopped Cilantro
  • 1/2 Lemon Juiced
  • 1/2 Lime Juiced
  • 4 cups Chicken Broth
  • 2 cups Zucchini Diced
  • 1/2 Onion chopped
  • 1 tbsp Butter
  • 2 tsp Minced Garlic
  • 2 tsp Turmeric
  • 1 tsp Ginger Paste
  • 1/4 cup Chopped Green Onions

Instructions

  1. Melt the butter in a pot over medium heat.

  2. Stir in the onions, and saute until beginning to soften.

  3. Add in the garlic, lemon juice, lime juice, zucchini, carrots, ginger paste, turmeric and salt and pepper to taste.

  4. Pour in the chicken broth.

  5. Mix in the green onions and cilantro.

  6. Cover and simmer until the zucchini has softened.

  7. Serve garnished with cilantro and lemon slices.
