Low-Carb Greek Burgers With Greek Yogurt Coleslaw

Ingredients

Greek Burgers

  • 1 pounde Ground Beef
  • 2 tbsp Olive Oil
  • 2 tbsp Sun Dried Tomatoes chopped
  • 1/4 cup Feta Cheese crumbled
  • 1/4 cup Finely Chopped Red Onion
  • 2 tsp Minced Garlic
  • 1/2 tsp Greek Seasoning
  • Salt and pepper to taste
  • Lettuce Leaves for serving

Greek Yogurt Colesalw

  • 1 cup Coleslaw Mix
  • 1/4 cup Plain Greek Yogurt
  • 2 tbsp Matchstick Carrots
  • 1/4 cup Green Onions plus additional for garnish
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Swerve Confectioner's Sugar Substitute
  • Salt and pepper to taste

Instructions

  1. Add the ground beef, sun dried tomatoes, ΒΌ cup feta, red onion, minced garlic, Greek seasoning and salt and pepper to taste to a large mixing bowl. Knead with your hands until well combined.

  2. Heat the olive oil in a skillet over medium high heat.

  3. For the meat mixture into four evenly sized burger patties, and saute until browned on both sides and cooked to your liking.

  4. In a bowl, stir together the ingredients for the coleslaw.

  5. Serve the burgers on a bed of lettuce, topped with the coleslaw.

  6. Add green onions and additional feta for garnish if desired.
