Keto Cheesy Jalapeno Chicken Skillet

Ingredients

  • 5 Thin-cut boneless skinless chicken breast cutlets
  • 2 tbsp Olive Oil
  • 1 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Oregano
  • Salt and Pepper to taste
  • 2 tbsp Butter
  • 2 tsp Minced Garlic
  • 1/2 Onion chopped
  • 2 Jalapenos deseeded and finely chopped
  • 1 tbsp Taco Seasoning
  • 1 bag Frozen Cauliflower Rice
  • 1 1/2 cups Shredded Mexican blend Cheese divided

Instructions

  1. Prepare the cauliflower rice according to package instructions and set aside.

  2. Add the olive oil to a skillet over medium high heat.

  3. Sprinkle the chicken with the chili powder, cumin, oregano, onion powder and salt and pepper to taste.

  4. Sear the chicken evenly on both sides in the skillet until cooked through. Remove and set aside.

  5. Reduce the heat to medium on the stove.

  6. Add the butter to the same skillet.

  7. Stir in the onion and jalapeno, and cook until softened.

  8. Mix in the garlic and saute for 30 seconds longer.

  9. Place the cauliflower rice and taco seasoning into the skillet, and stir to combine well.

  10. Sprinkle on 1 cup of the cheese, and stir until melted.

  11. Add the chicken back to the skillet, and sprinkle with the remaining cheese. Turn the heat off of the stove, and place a lid over the skillet until the cheese has melted.

  12. Serve garnished with parsley or cilantro if desired.
