Low Carb Stuffed Sweet Peppers

Make these low carb stuffed sweet peppers for dinner and indulge in a meal that tastes like you are cheating. These peppers are stuffed with chicken, cream cheese, and green chiles!

Ingredients

  • 1 pound sweet peppers
  • 1 cup rotisserie chicken shredded
  • 8 ounces cream cheese softened
  • 4 ounce can green chiles
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400 degrees F.

  2. Prepare a baking sheet with foil.
  3. Cut tops off of peppers and de-seed.
  4. In a mixing bowl, beat cream cheese until fluffy.
  5. Beat in entire can of green chiles, undrained.
  6. Gently fold in chicken.
  7. Stuff peppers with chicken mixture.
  8. Coat peppers in olive oil and place on baking sheet.
  9. Bake for 35-38 minutes.
  10. Please note that some filling may come out of the peppers during the baking process. Using a spoon, the filling can be pushed back into the peppers gently prior to serving.
