Ingredients

  • 8 oz canned chicken
  • 8 oz cream cheese softened to room temperature
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup hot sauce (I use franks)
  • Pinch of salt and pepper
  • 10  jalapeños halved with seeds removed
  • 8 slices of cooked bacon crumbled
  • 1/2 cup blue cheese crumbled
  • 4 green onions chopped
  • 1/2 cup crushed pork rinds

Instructions

  1. Preheat oven to 375 degrees

  2. Lightly grease a baking sheet and set aside.

  3. In a bowl add cream cheese, shredded cheddar cheese, buffalo sauce and salt and pepper.

  4. Drain canned chicken and add to bowl.

  5. Stir in chicken.

  6. In a separate bowl mix pork rinds and bacon.

  7. Fill each jalapeño with mixture and then top jalapeno with a spoonful of pork rinds and bacon mixture. 

  8. Place jalapeños on baking sheet.

  9. Bake until filling is melted and top is golden, about 15 - 20 minutes.

  10. Remove from oven and and sprinkle with extra bacon, blue cheese, green onions
