Ingredients

  • 1 tbsp avocado oil
  • 1 lb ground turkey
  • 1/2 white onion diced
  • 1/2 red bell pepper diced
  • 1 4 oz can green chilis
  • 3 tbsp taco seasoning See link above for homemade Taco seasoning recipe.
  • 12 oz frozen cauliflower rice
  • 1 cup shredded Mexican cheese

Instructions

  1. Heat oil in a skillet over medium heat.

  2. Once the oil is hot add turkey.

  3. Crumble turkey and cook through.

  4. Add in diced onion, bell pepper, and taco seasoning and cook until onion and paper have softened.

  5. Stir in chiles, and cauliflower rice. Cook for 5 or until moisture has evaporated.

  6. Sprinkle with cheese and cover skillet until cheese has melted.

  7. Top with cilantro, jalapeños, and diced avocado
