This Keto cauliflower chicken fried rice tastes just like takeout! It’s perfect when you are craving Chinese food.
Heat 2 tbsp of oil in a skillet on medium heat.
Add chicken and cook until no longer pink. Set aside.
Add remaining oil to skillet. Add onion, garlic, carrots, peas and ginger. Cook for 5 minutes or until vegetables are soft.
Push to the side and add in eggs, Stir and cook eggs through.
Add frozen cauliflower rice and chicken to skillet and cook until liquid has evaporated and chicken is cooked through.
Top cauliflower fried rice with coconut aminos and stir. Garnish with green onions.
To give your fried rice a kick add a pinch of red pepper flakes.
