  • 1 tbsp olive oil
  • 1 onion
  • 3 medium carrots peeled and sliced
  • 3 celery chopped
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • 2 cups cauliflower rice
  • 5 cups chicken broth low-sodium
  • 1 pound chicken breasts boneless, skinless


  1. Heat olive oil in a large pot over medium heat.

  2. Add onion, carrots and celery. Cook until vegetables soften.

  3. Add thyme, garlic, salt, pepper, chicken broth and chicken.

  4. Bring to a boil and then reduce heat and simmer for 5-7 minutes or until chicken is fully cooked.

  5. Remove chicken and shred with two forks.

  6. Add chicken and stir in cauliflower rice to pot.

  7. Simmer uncovered for 5-8 minutes, stirring occasionally, until cauliflower rice has softened.

  8. Season with salt and pepper to taste and top with parsley.
