  • 1 tbsp vanilla extract
  • 4 tbsp butter
  • 1/4 cup heavy cream
  • 1 cup pecans chopped
  • 1/2 cup Lily’s Dark Chocolate Chips, or sugar-free chocolate chips
  • 2 tbsp  Swerve Granular 


  1. In a saucepan, brown butter but do not burn it. Medium heat.

  2. Once you reach a brown coloring, add in the cream and combine.

  3. Add in sugar and vanilla and cook for 3-5 minutes until fully combined and thickened.

  4. Remove from heat and add in pecans and mix.

  5. On a parchment-lined pan, scoop 6-8 sections of batter.

  6. Let freeze for about 30 minutes to set.

  7. Microwave the chocolate in 30-second increments until melted. Then drizzle over caramel pecans.

  8. Freeze again for 5 minutes to set.
