Ingredients

  • 1 turkey breast whole
  • 1 cup chicken stock
  • 4 tbsp butter
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt and pepper
  • 1 tsp lemon zest
  • 1 lemon juiced

Low Carb Gravy

  • 4 tbsp dairy butter
  • 2 cups chicken broth
  • 1 tsp arlic powder
  • 1 tsp xanthan gum
  • Salt, pepper to taste.

Instructions

  1. If your turkey breast comes with a gravy packet, remove and discard.

  2. Take 2 Tbsp of butter, and spread under the skin of the turkey.  Take the remaining 2 Tbsp of butter, melt in the microwave, then pour over the turkey.

  3. Rub the turkey with the spices and the lemon zest.

  4. Place Instant Pot trivet in the pot. Pour 1 cup of chicken stock on the bottom.

  5. Close the Instant Pot and set to Manual. Cook on High Pressure for 45 minutes.

  6. Let the pressure release naturally.

  7. Carefully remove the turkey from the pot.

Gravy

  1. Heat butter in small pot over medium heat.

  2. Whisk in garlic powder, salt and pepper and xantham gum.

  3. Stir in chicken broth and simmer until thickens.
