Ingredients

  • 1 head cauliflower chopped into small florets
  • 4 eggs hardboiled and chopped
  • 1/2 cup mayonaise
  • 1/4 cup sour cream
  • 1 tbsp yellow mustard
  • 1/4 cup red onion chopped
  • 1 tbsp fresh dill chopped
  • 1/4 tsp paprika
  • 1/3 cup bacon chopped

Instructions

  1. Blanch the cauliflower florets in boiling water for 5-6 minutes, or until they just begin to become tender. Rinse and drain well.

  2. In a mixing bowl, combine all of the ingredients except the green onions, and stir to combine completely.

  3. Garnish with chopped green onions, and refrigerate before serving if desired.
