No Bake Keto Pecan Pie Bars

These no bake keto pecan bars are the perfect way to enjoy the flavors of pecan pie without all the carbs.

  • 2 cups almond flour
  • 2 tsp cinnamon
  • 1/3 cup powdered sugar substitute
  • 6 tbsp butter melted

Caramel/Pecan Filling

  • 3/4 cup unsweetened almond milk
  • 1/2 cup sugar subsitute
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • 1 tsp molasses sugar-free maple syrup
  • 1 tsp sugar-free maple syrup
  • 1/2 tsp cinnamon
  • 1 1/2 tsp xanthan gum
  • 1 1/2 cups pecan halves


  1. To create the crust layer: mix together the almond flour, cinnamon, powdered sweetener and dash of salt.

  2. Stir in melted butter. Pour the mixture into a parchment paper lined pan and press down firmly. Set aside for now.

  3. To create the caramel/pecan layer: combine all the ingredients, minus the xantham gum and pecan halves in a pot. Begin to melt over medium heat.

  4. Stir in xantham gum and bring to a slight boil. Continue to simmer until the mixture has thickened. Remove from heat.

  5. Pour the caramel mixture onto the crust layer. Top with pecan halves.

  6. Place the bars in your freezer to set, about 3 hours.

  7. Remove and slice. Store in an airtight container back in the freezer or refrigerator until you are ready to serve.
