  • 3 tbsp butter unsalted and divided
  • 2 slices bacon chopped
  • 10 ounces baby spinach leaves
  • 1/2 medium onion chopped
  • 4 ounces mushrooms sliced
  • 2 tsp garlic minced
  • 2 ounces cream cheese
  • 1/2 cup heavy whipping cream
  • 1/2 cup mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1/8 tsp nutmeg


  1. Heat 2 tablespoons of butter in a high sided saucepan over medium heat on the stove.

  2. Add the mushrooms and onions to the saucepan with the butter, sauteing until they soften.

  3. While the mushrooms and onions are cooking, add the other tablespoon of butter to a skillet over medium heat.

  4. Place the spinach in the skillet, and cook until wilted. Squeeze out any extra liquid and set aside.

  5. Cook the bacon, and set aside.

  6. Add the minced garlic to the saucepan with the onions and mushrooms, and saute an additional 30 seconds.

  7. Place the cream cheese into the saucepan, and stir until melted.

  8. Pour the heavy whipping cream into the saucepan, and stir until the sauce thickens.

  9. Mix in the mozzarella and parmesan cheeses until melted and well combined.

  10. Stir the wilted spinach into the cream sauce, and add the bacon. Stir to combine well before serving.
