Keto Egg Roll Meatballs

These egg roll meatballs are low-carb and make the perfect high-protein snack. They also make fun appetizers for parties!

  • 1.5 lb ground beef or pork
  • 2 cups coleslaw mix
  • 2 tsp minced garlic
  • 1 egg
  • 2 tsp ginger paste
  • 3 tbsp soy sauce
  • 1 cup pork rind crumbs


  1. Preheat the oven to 400 degrees.

  2. In a large mixing bowl, combine all of the ingredients and knead together with your hands until well incorporated.

  3. Form the mixture into 30 evenly sized meatballs, and place them on a baking rack that has been placed on top of a baking sheet.

  4. Bake for 20 minutes, or until browned and cooked through completely.
